There’s gotta be something in the water. It’s a particularly fruitful time in Las Vegas (which is pretty ironic, seeing as we’re in the desert, and nothing grows here). Everyone is either having a baby or opening a new restaurant/nightclub/lounge. Apparently our town’s economy is “back” and better than ever!
So, when Wicked Creative’s Stephanie Wilson told me about PoshBurger Bistro, I was all “Hmmm. Another gourmet burger restaurant? Really?” Then I took a gander at the release she’d sent me, and upon reading the bio of Chef Conrad Gallagher, my interest was piqued. To riff on Shania Twian, résumés, (for the most part) don’t impress me much; but I’ve gotta say – this guy’s bona fides certainly add-up to one heckuva toque’d fellow in the kitchen!
Having moved to New York from his native Ireland, Gallagher worked in such revered halls of cuisine as The Plaza Hotel, and the Waldorf-Astoria Hotel, the legendary Le Cirque, Lespinasse, Daniel, and the famed Le Bernardin. On St. Patrick’s Day 1996, Chef Gallagher cooked for President Bill Clinton and his guests, at the White House.
When he decided to go “home” to Ireland, and open Peacock Alley, he became, at age 25, the youngest chef to ever be awarded a Michelin Star (a record that still stands, today). Chef Gallagher and Peacock Alley would go on to win cases full of awards and accolades, including “Restaurant of the Year” and “Chef of the Year” as well as a coveted spot on Condé Nast Traveler’s “Top 15 in the World” list. After all of this, he moved to Cape Town, South Africa and became the Group Executive Chef and Director of Restaurants for the Sun International Group. And now he and his wife Candice (a former casino marketing executive) had opened an upscale burger joint in our town.
Says Gallagher, “My wife came to Las Vegas and fell in love. We created PoshBurger for Summerlin: It’s a neighborhood restaurant offering comfort food with a fine-dining twist.”
Okay. I was starting to feel it, but I knew until I saw and tasted the food, I was just reading words on a page.
So - come-back, next time; and read about the meal that Jacob and I enjoyed at PoshBurger Bistro. I don’t want to give too much away, but I will say this – as I typed this sentence, I began salivating like the titular canine, in Turner & Hooch.
