While the city is all a-buzz, wondering what riches are in store for visitors to The Cosmopolitan of Las Vegas, when it opens its doors, on Wednesday; Jacob and I were lucky enough to partake in the property’s “Dress Rehearsal” and enjoyed a terrific dinner at Blue Ribbon Sushi Bar & Grill, on Sunday night.

I’ve loved the Blue Ribbon restaurants for nearly 20 years, as they popped-up, offering late-night dinners to the denizens of New York nightlife.  Admittedly, this was the first time I’d ever dined at a Blue Ribbon for dinner, before getting my drink on; and I’ve gotta say, it’s even better when the room isn’t spinning!

Below are images of the items Jacob and I ordered with a little spiel about each.  Enjoy!

BR - Shumai
SHUMAI
These homemade pork dumplings are zesty and tangy, but for a real spicy treat, dab-on some of the chinese mustard!

BR - Sashimi Deluxe
SASHIMI DELUXE
18 thick slices of sashimi (three each of of six fish) arrive, arranged on a wooden plank with the usual fixins.  Our selection included Salmon, Flying fish, Torro, Yellowtail, Albacore, and Striped Bass.  The fish was so fresh it might have flopped right onto our plank!

BR - Rockshrimp Tempura
ROCKSHRIMP TEMPURA
Served with Wasabi Sauce and Daikon Oroshi, this appetizer is supposed to be eaten with chopsticks, but by the end I was using my fingers.  Sorry Mom!

BR - Sushi Bar Salad
SUSHI BAR SALAD
Lettuce wraps are filled with assorted raw fish and veggies, and served with a Yuzu Wasabi Dressing.  Our plate came with Tuna, Salmon and Salmon Roe, Fluke, Yellowtail, and Albacore.

BR - Grilled Tuna Steak
GRILLED TUNA STEAK
The tuna was seared to perfection, of ideal firmness, and only slightly seasoned.  Drizzled with Tomatillo Ponzu and served on a bed of Coconut Rice that is really something special, this is one fantastic dish!

BR - Fried Chicken
FRIED CHICKEN "BLUE RIBBON STYLE"
Moist on the inside and crispy on the outside, Blue Ribbon is known for their Fried Chicken.  What really makes it "pop" is the powdering of Shichimi Pepper, and the sweet/spicy Wasabi Honey dipping-sauce.

BR - Duroc Pork Ribs
DUROC PORK RIBS
The Black Vinegar Glaze was a bit mild for me, but Jacob thought it was great.  The meat is nice and tender and low on the gristle.  Definitely a rib you eat with utensils.  Jacob ate all of the Asian Pear and Grilled Cabbage Salad.

BR - Chocolate Bruno
CHOCOLATE BRUNO
Not your average Flourless Chocolate Cake, this decadent desert has a faint note of espresso blended in, and is placed on a crust of white chocolate.  Served with Green Tea Ice Cream this is one dark and sexy desert.

BR - Ginger Bread Pudding
GINGER BREAD PUDDING
Jacob's desert selection was, if possible, even better than mine.  With Crystalized Ginger and Caramel Sauce, it was that "just right" ratio of tangy and sweet.
