Upon conclusion of my interview with The Fabulous Beekman Boys’ Josh Kilmer-Purcell, I decided to check-out Beekman 1802 Mercantile – the online purveyor of the products made at the Beekman Farm and in the surrounding community of Sharon Springs, NY. I bought a round of Beekman 1802 BLAAK – the farm’s signature artisanal cheese – a 60:40 mix of raw goat milk and cow milk, made into a semi-hard, Italian-style cheese; and bottle of BLAAK Drizzle (a reduction of balsamic vinegar, figs and wild elderberries); as well as a couple of t-shirts.
Now, I did this because I’m a fan of their show, the t-shirts were fierce (I’m wearing one to this weekend’s Madonna concert), and I figured that if the cheese was good enough for Martha Stewart, it should be good enough for me. Also, based on the great interview and funny follow-ups Josh gave me, I decided to throw a token bit of support their way.
Now, I’d expected the cheese to be good – and it is. Really good (although, truth be told, they had me at “semi-hard Italian”). What I wasn’t expecting (though, in retrospect, I totally should have) was that the BLAAK Drizzle would be so friggin’ delicious – enhancing everything upon which it’s poured. So far, I’ve used the BLAAK Drizzle on a spinach salad with chicken breast, walnuts, and Beekman 1802 BLAAK; mixed with mayonnaise and garlic as a kicky aioli; with the Beekman 1802 BLAAK (as recommended); and in what might best be described as sublime inspiration – dripped sparingly, over a piece of cheesecake.
Now, that’s one versatile condiment!
