Fontainebleau Las Vegas is pulling back the curtain on its industry-leading experts with the debut of Signature Series by Fontainebleau, a spirited curation of interactive experiential classes, each lead by one of the resort’s acclaimed chefs, beverage leaders, or experiential connoisseurs.  Chef Patrick Munster (DON’S PRIME), Chef Damon Falls (THE TAVERN)Chef Stefano Chiarugi (Executive Chef), Chef Kyle Brandish (VIDA), Chef Yutaka Kude (KOMODO), Master Sommelier Kevin Reilly, and award-winning mixologist Juyoung Kang (Director of Beverage Development) will be sharing their skills with those partaking of this first wave of Signature Series classes, taking place throughout 2024 and into 2025.  Each class is tailored to the season it falls, guiding guests through semi-private experiences across the property and allowing them to learn and bring new techniques to their own table.  

“This is a celebration of culinary artistry and education, designed to inspire and elevate home cooking to new heights,” proclaimed Joseph Leibowitz (VP of Culinary Operations, Fontainebleau Las Vegas), who went on to explain that the series “represents an opportunity for our incredible team to showcase their skills and creative processes, while empowering guests to bring those professional techniques and flavors into their own homes.”

And, while this article is a preview, I’ll be taking the second of these classes—The Art of Sushi—next month and will report back about that experience then!

Following are the various classes being offered this summer and fall as part of the Signature Series by Fontainebleau:

Gameday Gourmet | Saturday, September 07
The Tavern | 11AM to 1:30PM | $100 per person

Score big this football season when Chef Damon Falls—who helms the resort’s sportsbook eatery, The Tavern—reveals his secrets behind game day party essentials. Enjoy elevated cocktails and gameday bites as Chef Damon demonstrates several of The Tavern’s most popular dishes, including Adobo Chicken NachosCreamy Spinach + Artichoke Dip, and Fried Chicken Wings.

And, since no gameday is complete without a celebratory tipple or two, award-winning mixologist Juyoung Kang (Director of Beverage Development, Fontainebleau Las Vegas) will be giving sports lovers something to bet on with craft cocktail demonstrations that pair perfectly with each savory morsel.

The Art of Sushi | Tuesday, September 10
Komodo | 7PM | $110 per person

The intimate setting of Komodo by David Grutman’s Groot Hospitality—the acclaimed creator of memorable interactive dining experiences—beckons you for this instructional and hands-on session. Commencing with a signature welcome cocktail, you will be introduced to the art and history of sushi making, during which you will have the chance to learn various techniques while enjoying your own sushi creations.  No two classes will be the same, with each focusing on a different delicacy of sushi (Maki!  Uramaki!  Temaki!  Nigiri!); and each guest receiving an apron and sushi-making kit.  

Following the course, you will be welcomed to the dining room for an additional $65 per person to enjoy a three-course omakase tasting with cocktail pairings.

The Perfect Pour | Saturday, September 21

Celebrate National Bourbon Month in style!  Join award-winning mixologist Juyoung Kang (Fontainebleau Las Vegas’s Director of Beverage Development) in partnership with Heaven Hill Distillery for a Perfect Pour immersion into all things bourbon.  You’ll explore the unique history of this quintessentially American spirit and learn how to prepare two cocktails: A proper Old Fashioned and the Paper Plane, a crowd-pleasing modern classic. This hands-on experience will give you the confidence to perform perfect pours at all of your future soirées.

In honor of National Pasta Day, A Passion for Pasta illustrates the art of pasta with detailed demonstrations of handmade and extruded styles. Led by acclaimed Italian-born Chef Stefano Chiarugi (Executive Chef, Fontainebleau Las Vegas), you will learn everything about this comfort food staple, from the simple yet irresistible fillings for stuffed pasta to an overview of sauce preparation.
