One of the first things my Mom did, upon moving to Austin, TX, a few years back, was to find her favorite barbeque joint.  Now, Texans are mighty particular about their barbeque, and so too is my Mom.  So, when she found that she lived just yonder from the old speakeasy that since opening in 1975 has gained acclaim throughout Texas Hill Country as The County Line on the Hill, well, she was as pleased as all get out.

Now, I’m all for barbeque (although I’m not a fan of ribs, because they get stuck in my teeth, and used to break my braces), and can survive for weeks on end on a menu of brisket, turkey, and chicken (sauce on the side, if you please).  But the food at The County Line isn’t about merely surviving; it’s about relishing in the experience – and making a big ole mess, while you’re so doing.

The County Line is as authentically Austin as one can handle (and that’s a wonderful thing) – from the quirky soundtrack in the bathrooms (amusing translations of English words and phrases into Hillbilly Gibberish), to the mounted steer that sings “Happy Birthday” to patrons celebrating their special day (like a beefy Big Mouth Billy Bass), to the t-shirts for sale at the bar.  I got one that says “While you’re hookin’, we’re cookin’” which I thought was hysterical.  (It was only upon donning it that it dawned on me that “hookin’” was a reference to fishing and not prostitution; and wondered if I don’t need to get out of Vegas, more…).

Simply put – if you’re gonna be in Texas, and you like good barbeque, make it a point to stop-in at one of The County Line’s locations around the state.  And remember, the one that started it all, is in Hill Country.
