I’m no stranger to the cupcake.  As a matter of fact, I’m a big fan of baked-goods, in general.  So it is with a certain degree of self-assuredness that I am able to say that due to The Cupcakery, the country’s best cupcakes are to be had in Las Vegas.

Sure, New York’s got Magnolia Bakery and Billy’s Bakery.  LA has Sprinkles Cupcakes (as do Orange County, the Bay Area, DC, and Dallas).  And now Austin, TX has thrown its ten-gallon hat in the ring, with Hey Cupcake!  All of these are awesome and make deliciously good cupcakes.

But when it comes down to moist cake, creamy frosting, and the sweet yummy goodness that can transport you back to your youth, The Cupcakery of Las Vegas has got ‘em all beat.

I don’t know what Pamela Jenkins’ secret is.  I do know that one day she was working for Tim Poster in the Executive Office of the Golden Nugget, and the next thing I knew she’d opened a bakery selling nothing but cupcakes.  “Bless her heart,” I thought to myself.  Well, ‘lo and behold, before you could say “Red Velvet” she’d gone and made a vanilla-scented success of herself!

Half a decade later, with a third Las Vegas location on the way, and two in Texas (Dallas and Frisco) going strong, Pammy J’s got an oven-baked empire on her baking-powder covered hands.  But don’t confuse this beautiful Texas rose for no shrinking violet.  With fans including Quentin Tarantino, Fergie, Avril Lavigne, Lance Bass, and Brad Garrett enjoying The Cupcakery’s delicious delicacies, including the Hot Maple Goodie (pecans and syrup), the Bugsy (carrot cake), the Julius (orange-pineapple) and my favorite, the Oh My Gosh~Ganache; Miss Pamela keeps those morsels of baked goodness coming as quickly as she and her little elves can pull ‘em outta the oven.
